Have you ever tried bulgur? So this is the ideal chance to put a new ingredient in your menu with this vegan bulgur salad.
In case you have never tried bulgur, I’ll give you a little explanation about why including it in your diet. Bulgur is a cereal grain, it is actually a whole wheat kernel and is low in calories and fat and rich in protein and fiber!!
And what’s almost more interesting, it takes just a few minutes to make it and you will feel full with one only dish, if you do not want to stay in the kitchen for longer hehe.
If this is the firt time you are gonna cook bulgur, do not worry, it is so so easy that you couldn’t believe. It is as easy as making cous cous. So while the bulgur gets cooked you can take advantage preparing the other ingredients.
- 1/2 cup bulgur
- 1/2 cup boiling water
- 1 handful rocket
- 1/2 cup diced red pepper
- 1 diced tomato
- 20 chopped black olives
- 1/2 tsp ground garlic
- 1 tsp cumin
- 1/2 tsp white pepper
- 2 tbsp fresh lemon juice
- 2 tbsp extra-virgin olive oil
- Combine bulgur, a little salt and boiling water in a bowl. Cover and let stand 30 minutes or until tender. Let it cool.
- Combine all the ingredientes in a bowl, toss well and serve.
